Born in Lower Austria and with two decades of experience in the Arlberg region, Paul has been our head chef at Gletscherblick since 2016 and is part of the family.
Ambitious, detail-oriented and curious, he shapes our culinary signature.

Driven by Passion
Paul Markovics refuses to be put into a box and that’s exactly what makes his cuisine so exciting. His signature: the bold use of delicate acidity and light, aromatic vinegars that give every dish a distinctive freshness. He especially loves surprising guests with modern, unexpected accents, such as his popular Jerusalem artichoke dessert.

With deep appreciation for the region, Paul prefers to cook with ingredients sourced close to home: Haiming carrots, fish from Tyrol, and select products from local producers form the foundation of his creations.
